Students in this year’s Latin American Studies course Eating the Americas (LTAM 220, taught by Sarah Kennedy) researched a native plant or animal of Latin America and wrote an educational label highlighting its traditional use by Indigenous peoples.

As modern destructive agricultural practices and climate change affect Latin American environments, it is imperative we highlight Indigenous knowledge of these species and their important use as foods, medicines, materials, and in ceremonies and rituals.
