Students from LTAM 220: Eating the Americas engaged in a conversation with Silvia Echeverria, a local business owner. Silvia Echeverria shared her story about how she and her family developed an El Salvadorian food truck business in Minnesota, further opening a discussion on how national identity and gender roles are reflected in her heritage’s cuisine.
The goal of the event was to provide a space of open conversation and the learning of Latin American Heritage for members of the Carleton community. Funds were used to support the classroom guests and food.
