Josh Small ’20 started DoughCo Bagels in the summer of 2022 after a year of refining his recipe during brief stints in the venture capital and startup worlds.
Originally from the New York City suburbs, his bagel cravings could not be satisfied in the Midwest during extended stays at Carleton, where he studied history, and the University of Chicago, where he received a master’s in international relations. Since launching DoughCo and debuting at brewery popups, his venture has quickly expanded to sell at over five farmer’s markets through the production of over 2000 bagels/week. He prides his boiled bagels on their slow fermentation process that locks in a malty flavor from barley malt he mills himself.
