In Spring 2011, Carleton students in Audrey Russek’s “Ethnic Foodways in the United States” (AMST 252) collected oral histories from members of the larger southeastern Minnesotan community who operate and work in food businesses that participate in both local and global food exchanges. The students used these histories to frame final research papers on topics connected to the history of ethnic food and foodways in the United States.
