Josh Small ‘20 started DoughCo Bagels in the summer of 2022 after a year of refining his recipe during brief stints in the venture capital and startup worlds.

Originally from the New York City suburbs, his bagel cravings could not be satisfied during extended stays in the Midwest at Carleton, where he studied history, and the University of Chicago, where he received a master’s in international relations. Since launching DoughCo and debuting at brewery popups, his venture has quickly expanded to sell at over five farmer’s markets through the production of over 2000 bagels/week. He prides his boiled bagels on their slow fermentation process that locks in a malty flavor from barley malt he mills himself.

Join Josh as he explains his inspiration for the business, the challenges he addresses, and future plans for expansion.
