Satisfying my Cravings on Campus During Quarantine!

While social distancing, Lita decided to work on her cooking and baking skills. It can get really stuffy sometimes when you can't go out, but it's also an amazing opportunity to do other things you never really had time to do!

During this pandemic, aside from doing my online classes and assignments, I also take time for myself. Many people feel left out, lonely, or just idle. I think these are all very fair feelings, but we can also seek some positivity currently. For instance, during “normal” school time, I’d get so busy going around, meeting people and just doing all kinds of activities like student government, hanging out in the library, catching up with the people at the admissions office or at OIIL (Office of Intercultural and International Living) office.

During the pandemic, I can’t do all that, so instead I choose to focus on the things I rarely get to do on a “normal” basis. These things include catching with family, and friends back home, reading, journal, exercising and what I lately discover to bring me joy – cooking!

I’ve been making so many types of food from scratch since Minnesota’s shelter in place order was established! When you come to college, especially as an international student, you do get cravings for food from home or different food that’s often difficult to get in the United States…but it’s not impossible!

In Northfield, there are quite few different restaurants serving Asian and Latino cuisines like the New Buffet, Mandarin Garden, Chapati, and el Triunfo. Also, there are supermarkets and local grocers that you can go to get ingredients to cook on your own like Family Fair, Food Co-Op, and Aldi. I was able to get some ingredients from Family Fair and from friends too!

So far, I’ve made dumplings from scratch (easier than I thought; it was just water and flour, some kneading and fillings of my choice!), spicy beef fried rice, fried noodles, bubble milk tea and I’ve also made some desserts like strawberry flan, chocolate pancake cake, and more!
